Gluten Free Pancakes

The weekend is here!!! Soak up those last mornings of Summer with @emilyhodnettwilson's Gluten Free Greek Yogurt Pancake Recipe!

Ingredients:

1 cup of GF 1:1 baking flour (make sure the flour includes Xanthan gum, if not add 1/4 tsp)

1 1/2 tsp baking powder

1/4 tsp salt

1/4 tsp baking soda

2 large eggs

1 cup plain greek yogurt

1/4 cup milk

2 tbsp melted butter, or a neutral oil

1/2 tsp vanilla paste

1-2 tbsp maple syrup

Instructions:

  1. Sift dry ingredients together (GF flour, baking powder, baking soda, and salt)

  2. In another bowl, mix all wet ingredients until smooth

  3. Combine ingredients into wet mix and stir lightly. Don't overmix!

  4. Heat a pan over low/medium heat and cook pancakes until slightly golden. You can cover the pan with the lid to ensure the middle is cooked!

  5. ENJOY!!!
